About us
Established in 1982 as Saldana’s Taco Shop, Coyote Joe's quickly became a favorite place for the locals and visitors alike. Ryan’s Gnarly Nachos, Killer Quesadillas and Giant Wet Burritos were the talk of the town.
In 1994 the little taco shop was expanded and a bar was added so our guests could enjoy an ice cold Cerveza, Margarita, Cuzuela Punch, Buffalo Milk, or one of our other specialty drinks including the Wile-E Coyote! No longer just a taco shop, a new name was needed and Coyote Joe’s was born.
